Tom Lubbe, is from New Zealand, after working in South Africa, he came to work with Gérard Gauby in France. Falling in love with the Region (and also Natalie Gérard’s sister), he decided to settle not far away in 2001 near Calce, a bastion of Roussillon natural wines. There he founded the Domaine Matassa (borrowing the name from a nearby river). The Observatory Carignan 2003 is a fine example of Lubbe’s commitment to natural winemaking. The wine is fermented using natural yeasts and aged in old oak barrels, which helps to preserve the fruit and add complexity and depth. It is deep and dark in color, with aromas of black fruit, spices, and a hint of smokiness. On the palate, it is full-bodied with firm tannins and a good acidity, which help to balance the wine’s richness. Flavors of dark fruit, earthy undertones, and a touch of black pepper are present, with a long and complex finish.
